Banana Cupcakes With Avacado Frosting

I stumbledupon this fabulous website a few weeks ago and when she posted THIS recipe I KNEW that I had to try it out.


THEY ARE DELICIOUS. Truly. I recommend this recipe to all.


I guess I should mention that when I usually make cupcakes from scratch, they fall in the center and end up being little reverse volcanoes. But this recipe ROCKED.

Also I didn't have any sour cream, so instead of freaking out, I used plain yogurt. It has less calories. I mean I did eat several of them so in order to feel a little less guilt I keep telling myself that I used yogurt instead of sour cream. It worked. :)


Mr. R said "It was good thank you. Too much frosting on mine, but it was good." 



I was a bit nervous when the frosting didn't thicken up as much as I like my butter cream, so I ended up adding the whole 2lbs of powdered sugar and then a little bit of milk and it was delicious!

MMF usually just licks the frosting off everything her cupcakes, but she gobbled up the entire thing, with a request for more! This could be because we have been reading a lot of Pinkalicious lately, and because the cupcake was green and not pink...

my little bro. took one bite and said "this isn't a cupcake, it's a vegetable..." and then he put it down. So I'm not sure it's for EVERYONE. But I enjoyed it.
